Cold Fusion is our refreshingly original take on a Belgian-inspired hybrid lager—a seamless blend of witbier charm and crisp German-style lager precision. Brewed with a base of Pilsner and wheat malts, hopped lightly in the kettle, and then fermented bone-dry using a co-pitch of two different yeast strains (Belgian wit and Bavarian lager), Cold Fusion then underwent an extended period of cold conditioning in a horizontal lagering tank to harmonize further and develop maximum smoothness. The result? A pale straw colored, light-bodied, unfiltered, ultra-drinkable beer with a zesty sparkle, gentle spice, and subtle citrusy and floral undertones. This brilliant, straw colored refresher was brewed with a base of pilsner malt and Jasmine rice and hopped lightly in the kettle with Sterling and Lemondrop. The Jasmine rice lightens the beer’s slender body while lending gentle back-note flavors of puffed rice. This brilliant, light-golden hued, Italian-style pils was crafted with the finest Adriatic coastal barley which provides a premium touch of bready sweetness to balance its assertively hoppy profile. Tricolore is a super fragrant and light-bodied lager that drinks with a pleasant smoothness, balanced hop bitterness throughout, and a crisp, clipped finish that makes you thirsty for another sip. Tricolore was hopped and dry-hopped with Cryo Citra before spending many weeks cold conditioning in one of our horizontal lagering tanks. De La Grange
6% ABV | Brett Farmhouse Saison 750 ml bottle De La Grange is French for “From the Barn” This elegant, rustic ale was brewed with our farmhouse’s aquifer well water, 100% locally sourced grains (floor malted pilsner, spelt, rye), and hopped with Hersbrucker Spät and Saaz. We fermented this beer dry with a co-pitch of traditional saison yeast and wild brettanomyces and then dry hopped it with additional Saaz before bottle conditioning. We get notes of spring wildflowers, zested lemon, straw, cracked pepper, barnyard hay, and complex earthy funk.

STRAWBERRY LYCHEE WIT🍓⚪️
5% ABV | Belgian-Style Wheat Ale with Orange Peel, Strawberry, & Lychee Strawberry Lychee Wit pours a hazy peach-rosé color into a glass and quickly froths with fruity aromatic foam. This base of this brew is a classic Belgian-style witbier, brewed with 50% malted wheat and a touch of flaked oats. The higher protein content malts lend a pleasant, subtly creamy mouthfeel sensation up front which is quickly met and overtaken by a spritzy, slightly acidic, finish. Post fermentation we conditioned this brew on ripened strawberry and sweet lychee. You can expect a light-bodied wheat beer that is extremely refreshing and perfectly suited for drinking outdoors in the Springtime sun. We get notes of strawberry angel food cake, exotic lychee juice, bright citrus, freshly picked strawberries, soft baked wheat bread, and delicate Belgian yeast character.

CHICO 🌅
5.5% ABV | American Pale Ale Chico is a true American classic — a small batch pale ale brewed with plenty of love thats sure to charm you with its Cascadian nostalgia. We brewed this “go-to” beer with a base of pale barley malt and added just a touch of light crystal malt for some depth and subtle sweetness that is met and balanced by smooth yet assertive hop bitterness. Chico was hopped in the mash with Cascade hops, then again 4 more times throughout the boil and whirlpool with more deliciously fruity and floral Cascade. We get notes of pink grapefruit zest, orange marmalade, fragrant Spring flowers, fresh pine, biscuit crackers, and orange blossom honey.

Brewed with locally sourced @rabbit_hill_malthouse grains — Pilsner, red wheat, and spelt — this saison reflects the connection between craftsmanship, terroir, and the rhythms of the land. Rustic malt character harmonizes with moderate fruity and floral hop notes from Hallertau Blanc and Saaz while delicate citrus and peppery yeast flavors give this saison its defining character. Almanac Saison drinks with a light body, pleasant tartness, and a high level of effervescence accentuated by a dry, crisp, refreshing finish. 6.2% ABV | Double Dry Hopped IPA with Mango This mouthwatering IPA pours a beautiful, hazy, electric-orange hue into a glass and radiates aromas of sun-ripened mangoes and fragrant hops. Mango Crush was brewed with a base of pale barely malt and plenty of mouthfeel-softening malted oats and wheat, along with a generous addition of juicy, mango-forward hops in the whirpool. We also dry hopped this heady crusher with a special, tropical fruit-forward blend of some tasty, exotic hops two separate times in the fermenter before blending the finished beer with legendary amounts of juicy mango. Mango Crush drinks effortlessly with a touch of smooth bitterness up front, followed by waves fruity tropical dry hop flavor, and finishing with a burst of mango juiciness. Take a deep whiff and you’re transported to a rustic farmhouse, where aromas of freshly harvested grains mingle with delicate citrus, floral, and peppery notes. Spring Saison was brewed with all locally-sourced @rabbit_hill_farmhouse pilsner and wheat malts, our filtered aquifer well water, and a blend of Amarillo, Huell Melon, and Lemondrop hops. It was then fermented nice and dry with a special house blend of saison yeasts. This effervescent farmhouse ale pours a beautiful, hazy, yellow color into a glass and is quickly capped with a large head of persistent and aromatic white foam. Spring Saison drinks with a light body, opens with a kiss of lemony hop and peppery yeast flavors, and then finishes crisp and bubbly. This beautiful, yellow-orange hued, unfiltered brew was crafted with a plush grist of malted oats and wheat for a pillowy, smooth texture. But the real magic happened after two rounds of intense dry hopping —where a 4/20-inspired hop blend and natural botanicals converged to emulate the expressive profile of Breakwater’s Strawberry Cherry Pie strain. 13% ABV | Belgian-Style Quadruple Ale Colts Abbey is our @worldbeercup and @greatamericanbeerfestival award winning, Belgian-style, dark, strong ale. Although not brewed by monks in a monastery, Colts Abbey has a special place in our hearts and reminds us of the Trappist beers of Belgium that inspired us when we were just starting out on our personal beer journeys. Despite its strength, Colts Abbey is remarkably drinkable and boasts a wide variety of wonderful aromas and flavors. It pours a deep copper hue into a glass and quickly develops an off white head of beautiful foam. As you sip and the beer begins to warm, you will notice aromas and flavors opening up and developing even further. A complex interplay of specialty malts, amber candi sugar, and expressive, fruity/spicy Belgian yeast at first give an impression of sweetness that fades and is replaced by a dry and effervescent finish. After primary fermentation, this high gravity brew spent extended time cold conditioning to round out all the edges and allow all the nuanced flavors and aromas to meld together. Colts Abbey was packaged with fresh yeast and priming sugar to undergo secondary fermentation right in the bottle, lending additional complexity and scavenging packaged oxygen in the process, prolonging its lifetime. We get notes of rum soaked raisin, bananas foster, toffee, glazed Honeybun, vanilla crème brûlée, caramelized sugar, fig jam, toasted marshmallow, molasses, clove, and crumb cake.

This specialty ale, inspired by the flavor profile of the famously named Irish Coffee cocktail, was brewed with a rich malt base, toasted oats, brown sugar, and a touch of milk sugar. It drinks will a full body, creamy mouthfeel, and a smooth, flavorful, warming finish. Irish Coffee was brewed to satisfy the lovers of local beer, coffee, whiskey, and Irish culture while fueling the upcoming St. Patrick’s celebrations - Sláinte! 13% ABV | Bourbon Barrel Aged Imperial Stout with Chocolate, Marshmallow, & Vanilla Easter Stout is a decadent holiday treat that we brewed last year and have been aging in Wild Turkey Bourbon barrels, awaiting this special occasion. The base of this beer is a thick, full-bodied, imperial stout brewed with a base of English Maris Otter pale barley malt layered with a variety of choice specialty grains and a touch of brown sugar. Post fermentation, this behemoth of a stout was given a long rest in freshly emptied American oak bourbon barrels before being blended together and conditioned on Ghanaian cacao nibs, tasty marshmallow bits, and Madagascar vanilla. We get notes of chocolate Easter bunny, smooth bourbon, rich vanilla, Lucky Charms marshmallows, toasted almonds, caramelized sugar, candied dates, American oak, and dark chocolate covered Peeps.

7.5% ABV | Belgian-Style Dubbel Ale Farmhouse Abbey is a beautiful, amber colored, Belgian-style ale that quickly develops a large, off-white head of meringue-like foam when decanted into a glass. Its beauty lies its ability to showcase layers of specialty malt and spicy Belgian yeast character while maintaining harmony, balance, finesse, and a high degree of drinkability. After primary fermentation, this specialty brew was conditioned cold for weeks to round out all the edges and allow all the nuanced flavors and aromas to gel together. Farmhouse Abbey was then bottled, corked, and caged with fresh yeast and priming sugar and underwent a secondary fermentation right in the bottle, lending additional complexity and scavenging packaged oxygen in the process, prolonging its lifetime. The resulting beer drinks like a sophisticated barley champagne, showcasing a wonderful depth of aromas and flavors followed by a dry and effervescent finish. 13% ABV | Belgian-Style Quadruple Ale Colts Abbey is our @worldbeercup and @greatamericanbeerfestival award winning, Belgian-style, dark, strong ale. Although not brewed by monks in a monastery, Colts Abbey has a special place in our hearts and reminds us of the Trappist beers of Belgium that inspired us when we were just starting out on our personal beer journeys. Despite its strength, Colts Abbey is remarkably drinkable and boasts a wide variety of wonderful aromas and flavors. It pours a deep copper hue into a glass and quickly develops an off white head of beautiful foam. As you sip and the beer begins to warm, you will notice aromas and flavors opening up and developing even further. A complex interplay of specialty malts, amber candi sugar, and expressive, fruity/spicy Belgian yeast at first give an impression of sweetness that fades and is replaced by a dry and effervescent finish. After primary fermentation, this high gravity brew spent extended time cold conditioning to round out all the edges and allow all the nuanced flavors and aromas to meld together. Colts Abbey was packaged with fresh yeast and priming sugar to undergo secondary fermentation right in the bottle, lending additional complexity and scavenging packaged oxygen in the process, prolonging its lifetime. We get notes of rum soaked raisin, bananas foster, toffee, glazed Honeybun, vanilla crème brûlée, caramelized sugar, fig jam, toasted marshmallow, molasses, clove, and crumb cake.
