Here are a few shots of the latest iteration of our Belgian Tripel taken in and around the barn just prior to the start of construction. This medium bodied, effervescent, golden ale is dangerously drinkable despite being brewed to a strength of 9% ABV. The clean, bready, malt profile is balanced by just a touch of hop bitterness so that together they take a back seat to the pleasant fruity and spicy flavors and aromas contributed by the highly expressive and attenuating Belgian yeast strain. We get notes of ripe pear, spicy clove, honey drizzled over baked bread, green apple, bubblegum, banana, and toasted sugar candies.
